BBQ Quail with Bourbon BBQ Sauce

BBQ quail is a tantalizing and flavorsome dish that effortlessly
combines the tender and succulent meat of quails with the smoky
and charred goodness of barbecuing. Quail, known for its small
size and delicate taste, becomes a true culinary gem when
prepared on the grill, elevating the dining experience to new
heights.

1. Wash quail and dry just enough so the quail are still moist.
2. Apply salt and pepper to your liking
3. Apply your favorite BBQ Rub (I use a sweet rub so skip the salt and pepper if you use a salty rub
4. Heat your grill in an offset configuration to 375ºF and set a chunk of your favorite wood touching the charcoals.
5. Set the quail on the grill opposite the charcoals until they reach 155ºF and then the skin should be near crispy.
6. Glaze with your favorite bbq sauces and let the qual reach 165ºF, then move over direct fire with breast side up until bottom side gets slightly charred.
7. Flip over to breast side down and do the same until the skin is crispy and slightly charred.
8. Take off heat and lightly brush with more bbq sauce if you prefer and let rest 5 minutes.
